Method for sharpening
All sharpening service is done by hand. Most sharpening is done the old fashioned way using a very steady hand and patience. I sharpen using high quality diamond whetstones followed by honing the final polish on a leather strop. It's low tech and super old school I admit but in turn it offers some real benefits over some of the other methods of sharpening out there. You will see and feel the difference.
The exception to using diamond whetstones is in dealing with serrations, which to be done correctly and effectively can be very problematic. Even in the professional world of sharpening it is sometimes done incorrectly, which can ruin serrations or affect the performance of a knife. Utilizing specially modified equipment and carefully hand sharpening each scallop one by one achieves truly sharp and excellent cutting results. This process is time consuming but produces extremely sharp scalloped serrations on most serrated knifes.
